On hamburgers, spring rolls and sprigs of chives
Brussels fell under the sway of French nouvelle cuisine in the 1970s and 1980s.
While the well-to-do sought out sophisticated, light cuisine, carefully presented with various garnishes, the 1970s also saw a trend towards standardisation and self-service. The arrival of burger chains also piqued the interest of Brussels residents and there were well-organised canteens in many companies.
Alongside this dichotomy, from the 1970s onwards, increasing numbers of restaurants arising from waves of migration started competing for customers.
This walk will highlight Brussels exponents of nouvelle cuisine, delving into the fascinating stories of Asian restaurants and of migration around the Brussels Stock Exchange (Bourse/Beurs) and learning all about the roll-out of fast food in Brussels!
This tour is being organised by La Brigade/De Brigade for the Heritage Days.
This food sector platform aims to be a space for discovery and experimentation bringing together audiences, practices and flavours. The association scours Brussels for the city’s food heritage and the original experiences that are developing here today. It attempts to re-establish links between the centre of the city and its outskirts, the flavours of the cuisine of yesteryear and the food of tomorrow. It organises workshops, guided tours, exhibitions, concerts and other events related to food heritage.
